I have several hunting knives that the brass parts of the handle are tarnished. What is the best way to shine them back up?

Road hunt nailed it.
Brasso and some elbow grease
Gunny, there’s an old trick for cleaning brass, bug juice. Get some unsweetened orange or lemon koolaid mix. Make it up 4 times the drinking mix and ONLY soak the brass in it. DO NOT put carbon steel in the mix. After a couple of hours pull it out rinse it off and if needed use a toothbrush on any indention’s. One of those ol’ Navy tricks….I can’t believe we used to drink that crap onboard ship.
Amway makes a non-abrasive polish that works great.* You cold also use Jeweler’s Rouge.*
I’ve always used and still have some tubes of polishing compounds called "semichrome polish" and "flitz". They are pink colored and look like runny toothpaste. They have a hint of abrasive in them and they make the brass look like new. Just put some on a clean white cotton cloth and rub into the metal. In no time they shine starts to come through.
Brasso brand polish, available at any hardware or grocery store, will make this task very quick and easy.
