The ‘Game Skinner’ made by Seki and sold by Outdoor Edge. It is so much nicer than any other "skinning" knife I’ve seen. The holding position is very ergonomic and allows me to make long quick smooth cuts to remove skin. It also has a rounded hook blade on it that is sweet for the initial long linear cuts through the hide. Because you have a hook, you are actually pulling the hide upward so there is no chance of accidently cutting guts and making a mess.
This is for big game and not the same kind of knife used for fish or ducks. A standard fish knife would be good for that. I like kind of longish narrow blades in decent stainless steel.
