game birds, small game
a single, double blade pocket knife, either locking or not, possibly with a gut hook for the clean or squeamish, with or without belt case
large game
caribou, deer, moose, elk, bear
skinning knife for removing hide from flesh
boning knife for separating connective tissue, separating bones at natural joints
large cutting knife for cutting flesh, muscle
in field sharpening system for touching up cutting edge
Buy knives that fit well in hand especially when bloody, wet. All knives should have sheaths.
Fish
fillet knives of suitable length for species/size of fish caught
longer bladed knife for heavier cutting of meat and bones
pocket knife or leather man style multi tool for whittling, general use . With tools for making repairs, tightening fasteners, etc around camp.
